Any idea if it supports Sync over Bluetooth?
Neither the RIM site nor the User Guide/Release Notes mention either Bluetooth or USB connections explicitly. I'll make the assumption that only USB is supported ;-(

Nope. Lotus Notes on the Mac is a data sink. Nothing talks to it. PocketMac has tried something, but in lieu of any APIs they failed miserably.
What you can do is sync Notes from Apple Mail or Entourage with the BlackBerry device:
